1 red pepper, sliced
1 sweet onion, thickly sliced
- Preheat the barbecue on MEDIUM. Toss the onion and peppers with olive oil. Place the sliced vegetables in a cast iron pan over the flame or on the side burner, if you have one. Cook for 5 minutes, stirring often, then reduce heat to LOW, stirring occasionally until onions are softened and brown, about 40 minutes.
Meanwhile, place sausage on the grill. Cook approximately 10–12 minutes per side, until cooked through. During the last few minutes of cooking time, warm the buns on the upper rack.
