HOT DOGS WITH CARAMELISED ONIONS AND PEPPERS
A couple extra ingredients takes this simple meal from boring to bravo!

INGREDIENTS
8 sausages
8 buns
1 red pepper, sliced
1 sweet onion, thickly sliced
olive oil
METHOD
- Preheat the barbecue on MEDIUM. Toss the onion and peppers with olive oil. Place the sliced vegetables in a cast iron pan over the flame or on the side burner, if you have one. Cook for 5 minutes, stirring often, then reduce heat to LOW, stirring occasionally until onions are softened and brown, about 40 minutes.
- Meanwhile, place sausage on the grill. Cook approximately 10–12 minutes per side, until cooked through. During the last few minutes of cooking time, warm the buns on the upper rack.
