1. Soak dried chickpeas in water overnight, or for up to 48 hours in the refrigerator.
2. Place chickpeas in a food processor with the garlic, onion and dry spices. Pulse the ingredients together until you achieve a rough mince consistency. Be careful not to puree the chickpeas completely!
3. Season the mixture to taste and then add in the chickpea flour. Add enough flour to bind the mixture together and then shape into small rounds.
4. Preheat your Broil King® pellet barbecue and place the rounds onto a baking tray. Cook them in the smoker for 30 to 45 minutes, turning them halfway through to brown both sides
5. For an extra burst of smoky flavour, lightly mist the falafel periodically with water whilst smoking.
6. Serve as an appetiser or as a side dish!
