Serves: 4 to 6. Based on using a 20cm cake tin.

Classic Brownies

Ingredients

250g dark chocolate
150g butter
70g cane sugar
150g flour
3 eggs
1 tablespoon cocoa
½ teaspoon salt

Instructions

1. Fill a saucepan with water and bring to the boil on your side cooker. Once it reaches a boil, reduce the heat to medium and put a metal bowl on top of the saucepan. Add 200g of the dark chocolate and 150g butter to the metal bowl and whisk continuously. Once combined, set aside to cool.
2. In a separate bowl, mix the eggs with the sugar and then add the melted chocolate and butter mix. Once combined, add the flour, salt and cocoa.

3. Line the cake tin with baking paper and pour in the mixture. Smooth out the mixture once it’s in the tin. Cut or break up the remaining 50g chocolate into pieces and place on top.
4. Preheat the grill indirectly by setting the knobs to the high position. When the temperature reaches 120℃ degrees, turn off the middle burners and reduce the outer ones to the low position.

5. Place the cake pan over the middle burners and bake for 35-40 minutes.
6. Take the brownie off the heat once cooked. It should be dry and still springy once cooked.
7. Leave to cool down to reach the optimal consistency or enjoy warm and gooey with a scoop of ice cream!
