Ingredients
- 1 rack of pork ribs (approximately 1.5 kg)
- 3 tbsp brown sugar
- 2 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp black pepper
- 1 tsp salt
- 1 cup BBQ sauce of your choice
- Wood chips for smoking (optional but recommended)
Instructions
1. Prepare the Ribs
- Remove the membrane from the back of the ribs to enhance flavour absorption.
- In a bowl, mix brown sugar, smoked paprika, garlic powder, onion powder, black pepper, and salt.
- Rub the mixture generously over the ribs, ensuring an even coat. Allow them to rest for at least an hour, or preferably overnight in the fridge.
2. Preheat the Barbecue
- Set up your Broil King for indirect cooking at a temperature of 120-130°C.
- If you’re using wood chips, place them in the smoker box or a foil packet over the burners.
3. Cook the Ribs
- Place the ribs in the indirect heat zone of the barbecue, bone side down.
- Close the lid and cook slowly for 2.5 to 3 hours.
4. Glaze with BBQ Sauce
- In the final 30 minutes of cooking, brush the ribs with BBQ sauce using a basting brush. This will create a caramelised, flavourful glaze.
5. Serve and Enjoy
- Remove the ribs from the barbecue and let them rest for 10 minutes before slicing.
- Serve with your favourite sides, such as coleslaw, baked potatoes, or garlic bread.
