Tomato and Basil Pizza

Ingredients

  • 40ml pizza sauce
  • 150g torn fresh mozzarella
  • Fresh basil leaves
  • Basic pizza dough
  • Herb oil
  • Coarse salt and ground pepper

Method

  1. Set up the grill with a heat source (charcoal or gas) on one side over medium-high. Clean and lightly oil the hot grill.
  2. On a lightly floured work surface, stretch or roll 1 piece of pizza dough or store-bought dough into an oval or any other desired shape. Brush one side lightly with herb or olive oil and season with salt and pepper.
  3. Using your hands, place the dough oiled side down, directly over the heat source. Brush dough with herb oil or olive oil and cook until the underside is lightly charred and bubbles form all over, 1 to 2 minutes. With some tongs, flip the dough and cook until lightly charred, 1 to 2 minutes. Slide the dough to the cooler side of the grill.
  4. Top with tomato sauce, mozzarella, and basil, and then cover, cooking until the cheese melts and toppings are heated through.
